Healthy Peanut Butter Banana Chocolate Chip Muffins
Yields 12 muffins

2-3 ripe (very ripe) bananas mashed
1/3 cup honey
*1/3 cup natural peanut butter VERY IMPORTANT (The stuff you can make yourself or at Whole Foods)
2/3 cup plain Greek yogurt
2 tsp PB2 peanut butter powder
1 3/4 cups whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1 cup chocolate chips

Mix the first 5 ingredients together in a large bowl.  Add the next 5 ingredients and mix well.  Finally, add the chocolate chips.  The batter will be pretty thick.
Add batter to lined muffin tin.  
Bake at 400 degrees F for 5 minutes, then turn the oven down to 375 degrees F and bake for 10-12 more minutes.  A toothpick will come out clean aside from some yummy melted chocolate.

Baked Applesauce

7-8 large apples peeled, cored and cut into chunks

a sprinkle of cinnamon

*yep, that's it.

Preheat your oven to 350° F.

Wash and peel your apples.
Core your apples.  (I find it easiest to cut the apple in quarters and then core the apple by cutting the center out on a slant.)
Cut your apples into chunks.

Place the apple chunks on a parchment paper lined baking sheet and sprinkle with cinnamon.  We like Saigon Cinnamon.  Use as much or as little as you'd like.


Bake at 350° for 45-50 minutes or until tender enough to mash.

While still warm, use a potato masher to smash them into sauce. (great stress relief!) Or put into a food processor if you prefer smoother applesauce.  We like it chunky like apple pie.

That's it.  Store in an air tight container in the refrigerator.  It's great cold or warm.  My favorite way is warm with a little scoop of vanilla ice cream.



Healthy Banana Bread
1/3 c. natural applesauce
3/4 c. brown sugar
2 eggs
2-3 very ripe bananas, mashed
1/3 c. water
1 2/3 c. whole wheat flour
1 tsp baking soda
1/4 tsp baking powder
1 pinch of salt

Preheat oven to 350 degrees.
Mix applesauce and brown sugar.
Stir in eggs then bananas then water.
Stir in dry ingredients.
Pour mixture into a loaf pan and bake 55-60 minutes or until knife comes out clean.
Cool and enjoy!



Curry Chicken Salad

4 c. shredded chicken (we used a rotisserie chicken and chunked it up but we've also used chicken breasts)
1 c. chopped apples
1 c. grapes (halved)
1/4 c. chopped celery
1/4 c. slivered almonds

Mix together in a large bowl.

In a small bowl, combine...
1 c. plain greek yogurt (we used Chobani)
1/4 c. light mayonnaise
2 TBSP curry powder
salt and pepper to taste

Mix chicken salad with dressing and serve on a bed of lettuce, with crackers or on flatbread.  Tasted great the next day if you have any leftovers.



Homemade Chicken Noodle Soup


1 Large Onion Diced
4-5 Spears of Celery in Bite Sized Pieces
3 Cups of Carrots in Bite Sized Pieces (nickled)
Salt and Pepper to taste


 - Add these to a large stock pot with a little bit of olive oil and saute on medium/low heat until the onions are translucent.


1 Grocery Store Rotisserie Chicken
(pull all the meat you can from the chicken and discard the skin and bones or keep them to make a stock)
1 TBSP Poultry Seasoning
2 - 48oz boxes of Chicken Broth + 2 cups Water
1 Bag of Reames Frozen Homestyle Egg Noodles

 - Add the meat from the chicken and the poultry seasoning to the vegetables just to warm the chicken, then add the chicken broth and water.  Bring to a boil.  Add the frozen Reames Noodles, return to a boil and cook for 5 minutes.  Reduce heat to low, simmer for 10-15 minutes then serve.



*This recipe freezes well.




Angel Food Fruit Cake


1 box of angel food cake mix
1 can of pie filling (blueberry, cherry or even crushed pineapple)


Mix together and put in an ungreased 13x9 pan.  Bake at 350 degrees for 30 minutes.
