Mickey Lunch

Mom and Dad just got back from Disney, without the kids.  Yes, sometimes parents need a weekend away by themselves and the Epcot Food and Wine Festival was just the place for us this year.  We had an incredible time but we did miss the kids a lot.  We made sure that we purchased a few tokens for our kids and of course we needed some things to accentuate Molly's lunch box.
Our main entrée is a plain old peanut butter and jelly on whole wheat.  We purchased a pancake mold and used it as a cookie cutter to make this sandwich into a Mickey sandwich.  The cookie cutter that was available was way too big for a sandwich so we decided to go with the pancake mold.  You actually may see Mickey shaped pancakes in the future.

Our vegetable side is edamame.  Although there is no Disney reference to this side, we just found them to be a nice and nutritious side that is pleasing to the palate as well as the eye.

Our fruit side is raisins.  These dried grapes are a great chewy contrast to the sandwich and edamame.  Their sweetness is a delicious compliment to the rest of the meal.

Our dairy side is a pepper jack cheese stick.  Its important for kids to get enough protein and calcium in their daily diet and this side is a yummy way to get both of these.

Our dessert consists of several different Disney character cookies.  These vanilla and chocolate cookies are shaped like a variety of the the beloved Disney originals including Mickey Mouse, Minnie Mouse, Donald Duck and Goofy.  We know that Molly will LOVE these.
