1st Day of School!

Tomorrow is the first day of school for Molly and Bean.  They are in a new school, new district and they are going to different buildings for the first time.  It's quite an adjustment but we are thrilled with our move and can't wait to see what the future has in store. Our first lunch is in Laptop Lunch Boxes, a great way to have a waste free lunch.  (link below)
Bean chose cucumber boats (pickling cucumbers hollowed out and stuffed with whipped cream cheese with a little bit of dry ranch mix in it.) for her first main entree.  We added a few pepper rings for some color.

She also has a few crackers and a couple of pieces of turkey pepperoni.
Molly chose pasta salad for her main entree.  She's always been a big fan.

Her vegetables are cucumber slices and pepper rings.  

Both girls have mixed berries for their fruit side.

Finally, their special first day dessert is a Rice Krispie Treat with a few sprinkles added for fun.

We also had to make sure that the teachers were not forgotten.  We made a survival kit for each of them so that they can have a great first day too. 
We picked up a few essentials at the Target travel section.  Tissues, hand sanitizer, band aids, Altoids, Tooth "brushes", Tums, Chap Stick, Advil, Hand lotion, a yummy Annie's snack, a few Hershey's Kisses and of course, the coveted red pen.
All packed up in a re-usable bin with and a little note of appreciation.

Something Different

Today was kind of strange when I was making Molly's lunch.  I usually have a main entree in mind when I am preparing Molly's lunch.  Today, I only had the sides planned and decided to just go with it and fill in from there.
Our main/vegetable entree is cucumber boats.  We mixed dill with some light cream cheese, scooped the seeds out of some small cucumbers and filled them with the cheese mixture.  YUM!

Our fruit side is sliced kiwi.  We weren't really going for a green and white theme but it just kind of happened.

Our dairy side is strawberry yogurt.  Molly likes strawberry yogurt once in a while for something a little different.

Our extra side is Scrabble Cheezit Crackers and Annie's Homegrown Bunny Graham Friends.  We thought that the Cheezits would be nice to scoop out any extra cream cheese.  The bunny crackers are a little something extra special.

Snack Lunch

Molly's little sister started preschool today as well and tomorrow she is the snack person.  We had to add some of our extra snacks to Molly' lunch so that she can share in the fun.  Normally, we wait until Friday for a special treat but we feel like the first week of school is pretty special.
Our main entree is a ham and cheese sandwich.  It is in a different compartment than normal but we still managed to fit it all in.  We used Wonder Smart White bread, added some Virginia ham, Pepper Jack cheese and mustard.  Then, we used a new small apple cookie cutter and made four small sandwiches.

Our vegetable side is cucumber boats.  We bought some pickling cucumbers at the farmers' market and decided that they would be perfect to add a little something extra to.  We hollowed the cucumbers by removing the seeds then added some light cream cheese that has dill mixed in it.  Molly and her sister really enjoyed this combination all summer.

Our fruit side is a nectarine.  This one is especially juicy and sweet but still has that great tartness that nectarines always offer.

We decided to go with Trader Joe's Honey Wheat Pretzels, dipped each end with colored white chocolate and then added the labels available at the Gourmet Mom on the Go website. So fun and mostly healthy.
